Ice Cream Sandwiches with Sourdough Cookies
Our thick, bakery-style cookies are perfect for more than just snacking — sandwiched around your favorite ice cream, they turn into the easiest homemade treat with almost zero effort.
We made ours with our classic size chocolate chip cookies and homemade ice cream tonight (thank you, Ankarsrum ice cream maker ✨) — but don't worry, you absolutely don't need to go that far. Your favorite store brand will more than hit the spot.
Instructions
- Let your ice cream soften at room temperature for 10-15 minutes.
- Lay out cookies in pairs, bottom side up.
- Scoop ice cream onto one cookie (about ⅓ cup) and spread evenly.
- Press the second cookie gently on top.
- Optional: Roll the edges in sprinkles, mini chocolate chips, or crushed nuts.
- Freeze on a parchment-lined baking sheet for at least 2 hours.
Serving Suggestion
Wrap individually in parchment and keep in the freezer for whenever the craving hits. Best enjoyed frozen solid, straight from the freezer with zero regrets.
